Yummy Winter Warming Spicey Soup Recipe!!

This warming Indian Spiced Soup combines convenience with the nutrional benefits of barley, lentils and vegies to produce a warming yet low fat, low budget meal that the whole family can enjoy.

Ingredients for 4 people:
1 tablespoon of vegetable oil
1 brown onion finely chopped
1/4 cup korma curry paste (adjust to taste/heat level)
1 litre vegetable stock
400g can diced tomatoes
2/3 cup red lentils (rinsed)
1/4 pearl barley (washed)
1 bunch of fresh coriader, chopped.
Serve with naan bread (sold at leading supermarkets)

Culinary Tip - Did you know?
You can use the entire coriander bunch for flavour, including the stems to the leaves, to intensify the aroma and aspect of the dish.

The Recipe:

Heat oil in a large saucepan over a medium to high heat and fry onions for 3-4 minutes, or until softened. Add the desired amount of korma curry paste for your spice level and stir to combine with onions for 1 minute.

Stir in the prepared stock to the onion/korma mixture. Add tomatoes, lentils, barley and bring to the boil. Cover and reduce heat to low, then allow to simmer for 20-25 minutes, until barley is tender.

Serve immediately with a generous sprinkling of fresh coriander and fresh naan. Enjoy!
